Mango Banana Popsicles

Like we always do this time of year, when the mangos go on sale, we buy as many as we think we can eat before they go bad. This year, our eyes were bigger than our mango cravings and we ended up having some mangos getting close to being too ripe and no desire to eat them before they got that way. So, I had to be inventive on how to use them in a delicious way and came up with this recipe on a whim and it turned out to be delicious! I usually couldn’t finish one and be satisfied… maybe after the 2nd or 3rd one would my taste buds be satisfied with enough of the deliciousness I call these popsicles. They were perfectly sweet and magnificently creamy. Mmmmm,mmmmm, MMMM! My mouth is watering just thinking about how yummy they were. I wish I had the ingredients to make them right now. BUT, sadly, I do not. You’ll feel sorry for me when you make them and try them for yourself.

Who could be denied this amazing mango banana treat from heaven?? I love them, my 3 year old loves them, my sister loves them (admit it, you do! 😛 ) and my husband would probably also love them if they had ever lasted long enough for him to try 🙂 hehehe…. what can I say? I can’t let anything go to waste! That would just be shameful! Soooo, when my honey lets something sit in the freezer for a week (or month), I HAVE to eat it…so it won’t go to waste… you understand, right????? Right??? Anyway, I can’t keep this awesome recipe from you any longer! Read it, go to the store and pick up a mango or two for a killer price and go make this *ummmm, what adjective have I not yet used to describe these decadent..ha! There it is…* decadent popsicles!

I will start off by saying that all of these amounts are approximate since I didn’t actually measure. (oops….) But, I will also tell you that I have made them multiple times and they have turned out AMAZING each time. The trick is to taste them after you get finished blending the ingredients together to see if you would like more of one ingredient than the other. I would recommend you go by the recipe before making any alterations though.

Mango Banana Popsicles

1 ripe mango, peeled with flesh removed from pit
1 banana
Juice from half a lime
3/4-1 C. coconut milk, FULL FAT
1 T. Coconut Oil

Place all ingredients into a blender and blend until smooth. Taste, add more coconut milk or lime juice to your liking, blend again, and place in popsicle molds. Let freeze and enjoy!
